CESTINI DI PASTA PHYLLO CON VERDURE E FETA - PHYLLO PASTRY BASKETS WITH SAUTE VEGGIES AND FETA CHEESE

Io ho usato uno stampo in silicone .

Slice the onion and brown it in a pan with extra virgin olive oil and mint, add zucchini cut into small cubes and toss them until they are cooked, "al dente". RISOTTO ALLA PROVOLA DI BUFALA AFFUMICATA - RISOTTO WITH SMOKED BUFFALO PROVOLA

Ingredienti per due persone:
150 gr. riso arborio
uno scalogno
olio
vino bianco
brodo 700 ml.
un goccio di latte
sale e pepe

Ingredients for two people:
150 gr. arborio rice
shallot
oil
White wine
700 ml broth.
a little milk
salt and pepper
two small buffalo smoked provola (a sort of mozzarella made with buffalo milk)

Slice the shallots and fry in oil (I use the oil for risotto, especially this one), when it blond, add the rice and toast it well, sprinkle with two fingers of white wine, pour gradually the broth and cook until the rice is ready, add salt and pepper to pleasure. Shortly before adding provola pour a little milk. When the rice is cooked, add the diced provola and stir to melt it well.
I prefer not to add more cheese. Also very good with a handful of chopped pistachios or with asparagus tips.

TORTELLINI

Chiudete a metà e sigillate bene i bordi.

buon appetito!

This is one of the Traditional recipes of our family, even here there are no quantity because we do everything by eye adjusting the flavor with the taste, but it's a special recipe because because my grandmother as her mother before her, and then my mother and now myself do it always, handmade, especially for Christmas. At home then we do them just at Christmas, in industrial quantities and once finished (obviously we freeze them) we don't eat them until the next Christmas. My mother has an obligation to make tortellini because, as she always says, "the last time grandmother didn't made them, she died", then ... better to avoid it?
The recipe is made only with pork and all strictly raw, as required by the recipe filed in Bologna!

INGREDIENTS
Filling: ground pork
pork sausages
ham
mortadella
eggs
parmesan
salt and pepper
nutmeg
Attention to the number of eggs, too many eggs harden the filling. Pay attention to the nutmeg you should feel it, but it must not prevail.

Pasta: an egg every hundred grams of flour

Prepare the dough, with the sheeter (or by hand if you are able) pull the dough, then cut from it rounds about 6 cm in diameter on which you put the dough.
At this point the closing (do quickly otherwise the dough is likely to dry out and you won't be able to close them  unless you wet the edges)
Close to half and seal the edges well.Tighten with left thumb and index the final part of the ravioli,
with the thumb and forefinger of the right take the right edge and place it over the left creating as the brim of a hat (hence the name cappelletti.
Continue so. You can safely freeze them on trays with a little semolina to prevent sticking, then put them in bags.

enjoy your meal!

RAGU ALLA BOLOGNESE - RAGU (SAUCE) BOLOGNESE

Ingredienti:

Grazie Nonna!!

SACHER TORTE di Knam

Per una tortiera da circa 24 cm
150 gr. Cioccolato fondente al 55%
6 tuorli e 6 albumi
20 gr. Zucchero a velo
2 gr. Sale
180gr. Zucchero semolato
130 gr. Farina
Vaniglia in polvere
200 gr, marmellata di albicocche
Burro e farina per lo stampo
Per decorare
250 gr. Panna da montare
355 gr. Cioccolato fondente

For a pan of about 24 cm
150 gr. Dark chocolate 55%
6 egg yolks and 6 egg whites
20 gr. Icing sugar

130 gr. Flour
Vanilla powder
200 gr, apricot jam
Butter and flour for the mold
To decorate
 250 gr. Whipping cream
355 gr. Dark chocolate
I modified the doses because the dough was too little for the pan that I had.
Collect the chocolate in a bowl; then melt it in a water bath or in the micro. In a bowl, whisk the butter with the sugar, salt and vanilla. When the mixture is well mixed, add one at the time the lightly beaten egg yolks, mix and add the melted chocolate.Separately, in a large bowl, whip with a whisk the egg whites with the sugar and add them to the mixture gently, then add the flour. Mix well until dough is smooth. Pour into buttered and floured pan and place in a preheated oven at 170 ° C for about 35-40 minutes.Remove from the oven and let the cake cool; then remove from the mold, gently inverting end let cool it this way. Cut it in half horizontally with a thin knife to obtain two discs. With a spatula spread a layer of apricot jam on the first disc and close the pie with the second disc. Spread the jam on the edges and the whole surface of the cake. For the ganache (icing)Pour the cream into a saucepan and place it on the stove to warm. Bring to a boil, then add the chocolate. Mix thoroughly with a wooden spoon until the chocolate will be completely melted and well blended with cream.Cover the cake with ganache. Chill for 20 minutes until the frosting is not solidified. STRUDEL DI MELE

Per la pasta strudel (per favore non la pasta sfoglia no no no):

250 gr, di farina
1 uovo

For the Strudel pastry (it's a peculiar kind pastry, do not use puff pastry, please!!):
250 gr. flour
1 egg
3 spoons of (corn) oil
1/ tea spoon of salt
1 spoon of sugar
milk (only if needed to knead well)

Mix all the ingredients and knead well, let rest for half an hour. When it will be time to prepare the strudel do not knead it anymore or rolling it will become impossible.

For the filling:
1 kg apple
80 gr raisins, softened in warm water
50 gr pine nuts
50 gr butter
2 spoons of breadcrumbs
1 finely grated lemon zest
80 gr. sugar
cinnamon

Peel and cut the apples in small pieces, add the sugar, breadcrumbs and saute them in a pan with the butter.(or, if you don't want to saute just add the sugar then melt the butter, brush the pastry with it and then sprinkle the bread over it.).
ROll the pastry very very thin, so thin that you can see the table cloth (fig. up), put the apples over it leaving a border all around. Sprinkle raisins, pinenuts, cinnamon, a little of sugar and the grated zest over the apples. Fold the edges, then, with the help of the tablecloth, roll the dough to form a cylindrical roll.
Put it over a pan, then cook in the oven at 220° for the first 10 min., then at 200° for 35/40 minutes.
Sprinkle with icing sugar. Serve with whipped cream or vanilla sauce.

Proseguire come sopra.

Orange marmalade tart
This tart can be made with any kind of marmalade or jam, it depends on your taste. I generally prefer jam with sour taste, like orange or sour cherry to balance the sweet of the pastry.

Shortcrust pastry:
350 gr. Flour 150gr. Butter 150gr. Sugar 1 whole egg and 1 yolk 1 pinch of salt
mix all ingredients quickly, if you use a kitchen machine, you can use the butter straight from the fridge. Let the pastry rest for half an hour ( not necessary if you use the machine).

Roll the pastry with a rolling pin, 5 mm.thick, cover a round pan with it leaving a border of 3 cm. prick the dough, cover with jam. Toll the remaining pastry, cut the straps, 1 cm wide, and put it over the jam to form a grid, fold the edge over the jam.
Cook in the preheated oven at 170c for about 20min., or until it looks golden.

Ask said you can use the jam you like, I also use grape name putting over the pastry some chopped walnuts and finely grated lemon zest, then cover with the jam and go on as described above.

Small white wine donuts from Mamma

The real truth is these donuts really not from my mum, the recipe isn't one of hers and she didn't cook them, but, as we love sweets but she must avoid animal fats the only kind of sweet case can eat are made with oil and wine. So I made these typical Italian small donuts for her.

500 gr. Wheat flour
200 gr. Sugar
150 gr. Corn oil
150 gr. White wine
A pinch of salt
Half bag of baking powder

Put all the ingredients in the Kenwood  machine (or similar kitchen machine). Mix well, then firm small donuts, pass them into sugar to cover them, cook into the oven at 180c. For 15 minutes.
