E' PASSATO UN PO' DI TEMPO...MY PEAK CHALLENGE 2016 - It's been a while ....MY PEAK CHALLENGE 2016

since the last time I posted something. I wanted but the time is always less and much is due to the new commitment that I made to myself since the beginning of the new year.
This commitment has a name "My Peak Challenge 2016" and one sponsor "Sam Heughan".
You know, generally the good New Year's Eve intentions make a bad end, they soon end up in oblivion, but this time someone made it impossible.
It all started in late December 2015 with the invitation of Sam (for those who possibly does not know who I'm talking about, he is the scottish young talented actor star of the American series "Outlander") to find at least 15 minutes of time each day to do any activities, not necessarily physical, even though preferably this, without skipping a day.
The initiative was called #PeakStreak and was preparatory to the launch of # MyPeakChallenge2016, all in coincidence of #Veganuary(one month pesco-vegetarian diet to to counterfeat global warming due to cattle breeding by avoiding eating meat).
And my path to find more time for myself begun, time to regain the lost shape and to eat healthier having also as fun with all  the friends participating to this initiative.
Then the launch of My Peak Challenge followed on February, 1st.
What is it? Well you can find out for yourself by connecting to www.mypeakchallenge.com page where you will find all the information including the chance to sign up and join us if I'll be ready to post this article in time, given that the deadline to join is April, 4.
It is an initiative, started already in 2015, that Sam and his trainer John Valbonesi created to raise money for charity in favor of the association Bloodwise (that fight a battle against leukemia and lymphomas and provides help and support to patients and their families).
All this, however, does not end in helping others because through this initiative we help ourselves challenging us to achieve an objective, a goal, and especially, but not only, by improving our lifestyle with a balanced diet and physical activity. That's why "challenge", Sam challenges us to come out from our shell, our "comfort zones", to find time for ourselves in a life that is more and more hectic.
The motto at the end is to help others while helping ourselves.
To achieve this they have created a meal plans and a training program, totally scalable, available on line on any platform for subscribers, with a private Facebook group where all participants gather to discuss, help, support, and where Sam and John themselves participate as soon as possible.
The result for some peakers is amazing, for others the simple fact of finding time for themselves is great.
I am in a middle ground, some physical results have already arrived but the greatest result is that I'm back to move every day.
So, join the team, you still have time !!! And, anyway you can partecipate even only buying the supporter pack at https://www.bearstrength.co.uk/ (a t-shirt plus other gadgets) or simply making a donation to Bloodwise.

RISOTTO ALLA PROVOLA DI BUFALA AFFUMICATA - RISOTTO WITH SMOKED BUFFALO PROVOLA

Ingredienti per due persone:
150 gr. riso arborio
uno scalogno
olio
vino bianco
brodo 700 ml.
un goccio di latte
sale e pepe

Ingredients for two people:
150 gr. arborio rice
shallot
oil
White wine
700 ml broth.
a little milk
salt and pepper
two small buffalo smoked provola (a sort of mozzarella made with buffalo milk)

Slice the shallots and fry in oil (I use the oil for risotto, especially this one), when it blond, add the rice and toast it well, sprinkle with two fingers of white wine, pour gradually the broth and cook until the rice is ready, add salt and pepper to pleasure. Shortly before adding provola pour a little milk. When the rice is cooked, add the diced provola and stir to melt it well.
I prefer not to add more cheese. Also very good with a handful of chopped pistachios or with asparagus tips.

TORTELLINI

Chiudete a metà e sigillate bene i bordi.

buon appetito!

This is one of the Traditional recipes of our family, even here there are no quantity because we do everything by eye adjusting the flavor with the taste, but it's a special recipe because because my grandmother as her mother before her, and then my mother and now myself do it always, handmade, especially for Christmas. At home then we do them just at Christmas, in industrial quantities and once finished (obviously we freeze them) we don't eat them until the next Christmas. My mother has an obligation to make tortellini because, as she always says, "the last time grandmother didn't made them, she died", then ... better to avoid it?
The recipe is made only with pork and all strictly raw, as required by the recipe filed in Bologna!

INGREDIENTS
Filling: ground pork
pork sausages
ham
mortadella
eggs
parmesan
salt and pepper
nutmeg
Attention to the number of eggs, too many eggs harden the filling. Pay attention to the nutmeg you should feel it, but it must not prevail.

Pasta: an egg every hundred grams of flour

Prepare the dough, with the sheeter (or by hand if you are able) pull the dough, then cut from it rounds about 6 cm in diameter on which you put the dough.
At this point the closing (do quickly otherwise the dough is likely to dry out and you won't be able to close them  unless you wet the edges)
Close to half and seal the edges well.Tighten with left thumb and index the final part of the ravioli,
with the thumb and forefinger of the right take the right edge and place it over the left creating as the brim of a hat (hence the name cappelletti.
Continue so. You can safely freeze them on trays with a little semolina to prevent sticking, then put them in bags.

enjoy your meal!

RAGU ALLA BOLOGNESE - RAGU (SAUCE) BOLOGNESE

Ingredienti:

Grazie Nonna!!

SACHER TORTE di Knam

Per una tortiera da circa 24 cm
150 gr. Cioccolato fondente al 55%
6 tuorli e 6 albumi
20 gr. Zucchero a velo
2 gr. Sale
180gr. Zucchero semolato
130 gr. Farina
Vaniglia in polvere
200 gr, marmellata di albicocche
Burro e farina per lo stampo
Per decorare
250 gr. Panna da montare
355 gr. Cioccolato fondente

For a pan of about 24 cm
150 gr. Dark chocolate 55%
6 egg yolks and 6 egg whites
20 gr. Icing sugar
2 gr. Salt
180gr. sugar
130 gr. Flour
Vanilla powder
200 gr, apricot jam
Butter and flour for the mold
To decorate
 250 gr. Whipping cream
355 gr. Dark chocolate
I modified the doses because the dough was too little for the pan that I had.
Collect the chocolate in a bowl; then melt it in a water bath or in the micro. In a bowl, whisk the butter with the sugar, salt and vanilla. When the mixture is well mixed, add one at the time the lightly beaten egg yolks, mix and add the melted chocolate.Separately, in a large bowl, whip with a whisk the egg whites with the sugar and add them to the mixture gently, then add the flour. Mix well until dough is smooth. Pour into buttered and floured pan and place in a preheated oven at 170 ° C for about 35-40 minutes.Remove from the oven and let the cake cool; then remove from the mold, gently inverting end let cool it this way. Cut it in half horizontally with a thin knife to obtain two discs. With a spatula spread a layer of apricot jam on the first disc and close the pie with the second disc. Spread the jam on the edges and the whole surface of the cake. For the ganache (icing)Pour the cream into a saucepan and place it on the stove to warm. Bring to a boil, then add the chocolate. Mix thoroughly with a wooden spoon until the chocolate will be completely melted and well blended with cream.Cover the cake with ganache. Chill for 20 minutes until the frosting is not solidified. Writing with a croissant "Sacher" in the center.
Serve with whipped cream.
